ORGANIC & LOCAL PRODUCE

Local Foods & Kitchfix Garden Chicagoland

We use organic, local vegetables and fruit as much as possible. We partner with Local Foods, Chicago’s first wholesale distributor of strictly local foods, and have a small garden in the back of our kitchen where we grow peppers, tomatoes and kale.

PASTURE-RAISED CHICKEN & PORK

Gunthorp Farms LaGrange, Indiana

Our poultry and pork come straight from Gunthorp Farms (Indiana), where the animals are pasture-raised without antibiotics or added hormones.

100% GRASS-FED & FINISHED BEEF

Seven Sons Farm and Grass Run Farms Roanoke, Indiana and central US

All of our beef is 100% grass-fed and finished. We source our grass-fed beef from Seven Sons Farm in Roanoke, Indiana, and our whole cuts and bones come from Grass Run Farms, a group of farmers in the Midwest.

Local Pasture-Raised Eggs

We receive weekly egg deliveries from Seven Sons Farm (Indiana). Their chickens are raised on pasture, where they are free to roam, and kept safe at night in a mobile enclosure.

SUSTAINABLE SEAFOOD

We use as much wild-caught seafood as possible and offer sustainably, ocean-raised salmon. Our seafood standards continue to sharpen as wild-caught and sustainable fish becomes easier and more affordable to source.

ORGANIC WHOLE GRAINS

We always look for the least processed version of any ingredient. So, when it comes to grains, we utilize whole grains like rice and quinoa (a pseudo grain, actually!). All of our grain ingredients are gluten-free and corn-free.

NATURAL SWEETENERS

We choose the highest quality natural sweeteners, including raw and organic honey and Grade B maple syrup, and always use them in responsible quantities.

OILS & VINEGARS

We believe in the beauty of healthy fats, and find flavoring through coconut oil, extra virgin olive oil, sunflower oil, apple cider vinegar, balsamic vinegar, white wine vinegar, and coconut vinegar.
