As we gear up for the September Whole30, we want to share some of our favorite Whole30 recipes throughout the month. 


We've made it to the end of week 3 of your Septmeber Whole30! Next, we want to share the recipe for our Paleo Bolognese. It holds a  a special place in my heart. Secret ingredient? You guessed it: Cashews! In the first restaurant I ever worked at, the head chef loved to create this dish. It is truly a sauce that takes a lot of love and attention and you can taste that in the final product. I learned how to cook and build flavors through this dish.

For our Whole30 version, we skip the red wine, and instead of adding cream and cheese at the end, we use nutritional yeast and cashew milk. Try it out for yourself - I think you’ll love the rich flavors over any spiralized veggie! 

Paleo Bolognese

Components:

zucchini, spiralized

yellow squash, spiralized

spaghetti squash, roasted

Pasture-raised Chicken Sausage:

1 lb pasture-raised chicken, ground

2 ea garlic cloves, minced

½ tsp fennel seed, ground

¼ tsp chili flake

1 tsp sea salt

½ tsp black pepper, ground

¼ tsp oregano, dry

¼ tsp thyme, fresh, chopped

Instructions:

COMBINE all ingredients together

SET the sausage mix aside while you measure out the remaining ingredients:

Paleo Bolognese Sauce

4 ea garlic cloves, minced

1 ea onion, small, chopped fine

1 lb pasture-raised chicken sausage (recipe above)

¼ c extra virgin olive oil

1 tsp sea salt

½ tsp black pepper, ground

¼ tsp oregano, dry

64 oz crushed tomatoes (the ones in the can work best!)

2 Tbl tomato paste

2 tsp red wine vinegar

¼ c raw, unsalted cashews

1.5 c water

1 Tbl basil, fresh

2 Tbl nutritional yeast

Instructions:

HEAT a large sauce pot over medium heat

SWEAT the garlic and onions in the olive oil

ADD the chicken sausage to the party and sautee until cooked through

WORK the salt and spices into the sausage mix to draw out more flavor

COVER the mixture with the tomato product and vinegar

SIMMER for 30 minutes

LIQUEFY the cashews and the water in a high powered blender until smooth and add nutritional yeast

NO SERIOUSLY, KEEP BLENDING it should be smooth like silk

POUR the cashew cream into the bolognese sauce and mix well

FINISH the sauce with fresh chopped basil

SERVE with the vegetable “noodles” of your choice
